This week is back to school time for us and we are back to super busy mornings. With 3 kids to get up and out the door it can be hard to find time for my own breakfast! However, I know I need to fuel myself so we either make a batch of porridge which everyone has or I’m making overnight oats each evening.
This reciep also is a winner if you are back to the office and need something to take with you or for mums with babes! I used to make this and grab it between morning feeds to eat one-handed whilst holding baby.
If you haven’t tried overnight oats then you really must! I love how creamy the oats go and there are so many toppings you can add. Here are some of my favs:
- Berries and nuts
- Apple and cinnamon
- Banana and nut butter
- Mango and pumpkin seeds
- Tinned peaches and chia seeds
- Figs and a drizzle of honey
Berry-tastic overnight oats
- 4 tbsp oats
- 1 tbsp chia seeds
- 4 tbsp mixed berries
- 175 ml milk
Mix and leave in the fridge overnight.
Feel free to add your choice of fruit and extra toppings!
