Family friendly “not a chicken curry”

Usually my children are not so keen on curry, however being half Sri-lankan this is not an option for me! My oldest girl used to eat a lot of spice, in fact at 22 months in Sri-Lanka she was eating curry off my plate. She went off spice and is now age 7 working back onto it. My boy has never been into anything spicy and so he is definitely a work in progress.

So this time I went at it from another angle. A fragrant but mild curry served with rice and optional naan on the side. However I sold it as “it’s not a curry, it’s chicken with naan”.  It worked. WIN.

The beauty of this meal is it can either be made in the slow cooker/crock pot or on the hob.

Ingredients
  1. 1/2 tbsp olive oil
  2. 500g chicken on the bone, skinless
  3. 2 onions
  4. 2 cloves garlic
  5. 2 peppers
  6. 3 carrots
  7. 500ml chicken stock (mine was homemade)
  8. 50g sachet creamed coconut
  9. 1 tsp tumeric
  10. 1 tsp cumin
  11. 1 tsp coriander
  12. 1/4 inch fresh/frozen ginger, grated
  13. 1/2 cup dried lentils
Instructions
  1. Brown the chicken in a pan. Add the onions and garlic to soften them.
  2. Then either place all ingredients in a slow cooker/crock pot and place on high for 8 hrs.
  3. Or cook in a large pan on a medium heat for 40 minutes.
  4. Serve with rice and naan if wanted.

Moroccan Style Slow Cooker Tagine.

I went to Marrakech for Christmas a few years ago. I don’t think we had a bad meal the whole time we were there. Each dish was so wonderfully spiced and fragrant, yet not overpowering. This dish reminds me of that holiday. Oh for some sun, sat on a roof terrace, drinking Moroccan mint tea!

I marinaded the chicken overnight, you could probably get away with just toasted the spices in the pan with the chicken, but marinade if you can. I think it enhances the flavour and it always heighten the anticipation of the meal for me. 

I love playing around with spices. As a child I loved it when my mum got out her silver spice tin, all those small pots filled with fragrant, colourfulness. I was even more excited when I got my own spice tin!

Moroccan spices blends tend to include: ginger, cinnamon, corainder, allspice, pepper, tumeric, cumin and paprika. Sometimes saffron, cardomon, nutmeg and star anise. The Morrocan spice stalls are amazing! Make your own blend up and try it out.

Spice Mix
  1. 1 tsp tumeric
  2. 1 tsp paprika
  3. 1 tsp cumin
  4. 1 tsp ginger
  5. 1 tsp cinnamon
  6. Black pepper
Tagine
  1. 600-750g chicken thighs/drumticks - remove the skin.
  2. 1 tbsp rapeseed/vegetable oil
  3. 2 onions, chopped
  4. 4 garlic cloves, crushed
  5. 6 cloves
  6. Mixture of vegetables ( I used 2 peppers, 200g cherry tomatoes and 500g mushrooms)
Instructions
  1. Mix the spices and rub into the skinless chicken. Cover and leave in the fridge overnight.
  2. Chop 2 onions and 4 cloves of garlic (I also left this in the fridge overnight to save time the next day).
  3. Cook the onion and garlic in the oil, add 6 cloves.
  4. Now add the chicken and brown all over.
  5. Place in the slow cooker pot and top with chopped vegetables of your choice. I used peppers, cherry tomatoes and mushrooms.
  6. Pour in 125ml water.
  7. Cook on high for 5-8 hours or on low if you are leaving it for longer due to the amount of liquid.
  8. Stir and serve on a bed of couscous.
Notes
  1. Remove the bones if serving small children.

Slow Cooker Bolognaise Recipe

Slow cookers, they are right up there in my mind. If you can’t afford a personal chef then this has to be the next best thing. Throw food in them, press a button and come back to amazing smells and a meal all cooked.

Now I know it doesn’t take much time to cook up a bolognaise, but  they really do taste great when the meat has been simmering all day. I tend to load up my slow cooker the night before, then pop it in the fridge and it’s all ready to go when I make my morning cuppa the next day.

This was my first attempt at slow cooked bolognaise, it was different to my usual saucepan cooked version but both equally tasty. I used super lean mince from my local butcher so it didn’t need browning before cooking. If your mince is not super lean I’d suggest you brown it, remove the oil then pop it in the slow cooker. Add in any veggies you like, this was just what we had around. I add beans into ours to make the meat go further and to reduce the glycaemic index of the meal.

Recipe (Serves 6):

4 carrots

2 onions

3 cloves garlic

2 peppers

1 broccoli stalk (if you have it)

1 cup black eyed beans

1 tin chopped tomatoes

2 tbsp tomato puree

200ml water

200ml red wine

1 tbsp balsamic vinegar

1 beef stock cube

pepper

dried mixed herbs

500g lean minced beef

  • Place the vegetables and beans in the slow cooker first, then add the chopped tomatoes, puree, water, wine, stock cube, pepper and herbs.

  • Place the beef on the top, cook on high for 6-8 hours. Enjoy with pasta and a large glass of red wine. Mmmmm.
