Many moons ago when I first started this blog and had my first toddler, we baked quite a lot and made cute videos. You can still see them way back on my youtube/blog and they bring me joy everytime I stumble over them.
Now, almost 10 years on and with families needing easy recipe for lockdown, it feels like the right time to bring this recipe out again with an updated video.
These flapjacks are quick to make, quick to eat, contain only a few ingredients, use up your old bananas and have what I consider to be a sensible amount of sugar in them.
Simple Banana Flapjacks
- 150 g oats
- 1 tbsp honey
- 75 g margarine/butter
- 1 mashed banana
- 75 g raisins
- 1 tsp cinnamon
Measure out the oats.
Melt the marg/butter
Add the honey and marg/butter into the oats and stir.
Add the raisins plus cinnamon and mix.
Mash the banana and add.
Spoon into a greased and lined tin.
Bake at Gas Mark 5/200C for 20 minutes. I like to cover the top for part of the cooking to stop the raisins burning.
These will keep in an airtight container for 3 days and they freeze well too. You could of course make double the amount if you have lots of snacking to do!
