Could cold rice fix obesity?

This week I was quoted on the BBC News Website in an article about a new way of cooking and eating rice to shave off the calories. The researchers found that adding 1 tsp coconut oil to the rice as it boils and then cooling it for 12 hours reduced the calories by 60%. The reason: the starch in the rice alters to contain more resistant starch. This is harder for the body to digest and so the body absorbs less calories from the rice, instead excreting them.  

An interesting concept isn’t it. I love these new ideas that researchers are coming up with. This has great potential if…. you eat a lot of rice. I don’t feel that something like this is going to solve the obesity crisis. Unless you are eating rice daily it’s not going reduce someone’s energy intake by enough to make much of a difference. Ultimately people need to be eating the right amount of the right foods at the right times for a healthier outlook to life. 

The other big problem is there is a risk of food poisioning if you cool and reheat rice. So it’s probably not a good idea for us to all start doing this right away. I bet that coconut oil makes the rice taste nice 😉
