Christmas, often a time of rich food, sweet treats and excess. Now with a toddler around and my love of healthy eating I decided to revamp our usual flapjack recipe. My husband is a huge mince pie fan and this rather inspired me to use the mincemeat in a different way.
What I love about this recipe is it simplicity, literally it is just 3 ingredients (though you could add to it) and you can knock up a batch in just a few minutes. It really invokes all the smells and tastes of Christmas but is full of oaty goodness and is by far a much healthier version of a mince pie.

I made these last night for my flapjack loving boyfriend. Was feeling super festive so added brandy and nutmeg (my secret to making bought mince taste homemade). Delicious!
Fabulous addition Ellen, I love it! Thanks so much for your comment.

Thanks for popping by Mandy.
Made these Xmas Flapjacks and they are lovely!! Hubby suggested a bit extra cinnamon, good suggestion. Son took some for his post kickboxing snack! And…if I have any gluten free patients, could make it for them! 🙂 Thanks Priya 🙂
Christmas flapjack completely spot on! Excellent easy recipe for post night shift haze. Thanks.
Thankyou so much and I’m so pleased you like them.
Made these this morning, they are really good. Ideal for children to make, as no heating of syrup etc required, put the ingredients in the bowl and mix.
My batch have half gone already.
Can’t wait to buy some mincemeat to try these out! I love mince pies but at over £2 for a box of 4 gluten free ones I am always looking for another way to get my hit.
These sound like a great little snack for wee ones, will definitely give them a go! #recipeoftheweek
Thanks for popping over 🙂 my toddler loves them (yet doesn’t like mince pies).
