Christmas Flapjack (wheatfree, dairy free)

Christmas, often a time of rich food, sweet treats and excess. Now with a toddler around and my love of healthy eating I decided to revamp our usual flapjack recipe. My husband is a huge mince pie fan and this rather inspired me to use the mincemeat in a different way. 

What I love about this recipe is it simplicity, literally it is just 3 ingredients (though you could add to it) and you can knock up a batch in just a few minutes. It really invokes all the smells and tastes of Christmas but is full of oaty goodness and is by far a much healthier version of a mince pie.

Ingredients
  1. 200g oats
  2. 150g gluten free mince meat
  3. 1 overripe or ripe mashed banana
Instructions
  1. Weigh out the ingredients.
  2. Mash the banana.
  3. Mix it all together and spoon into a greased, lined tin.
  4. Bake at Gas Mark 5 for 30 minutes.
  5. Cut into 9 squares and allow to cool.
  6. Store in an airtight tin.

  2. I made these last night for my flapjack loving boyfriend. Was feeling super festive so added brandy and nutmeg (my secret to making bought mince taste homemade). Delicious!

    Made these this morning, they are really good. Ideal for children to make, as no heating of syrup etc required, put the ingredients in the bowl and mix.
    My batch have half gone already.

  5. Can’t wait to buy some mincemeat to try these out! I love mince pies but at over £2 for a box of 4 gluten free ones I am always looking for another way to get my hit.
