Christmas Flapjack (wheatfree, dairy free)

Christmas, often a time of rich food, sweet treats and excess. Now with a toddler around and my love of healthy eating I decided to revamp our usual flapjack recipe. My husband is a huge mince pie fan and this rather inspired me to use the mincemeat in a different way.

What I love about this recipe is it simplicity, literally it is just 3 ingredients (though you could add to it) and you can knock up a batch in just a few minutes. It really invokes all the smells and tastes of Christmas but is full of oaty goodness and is by far a much healthier version of a mince pie.

  1. They look amazing and it would never have occurred to me to put mincemeat in flapjacks. I’m going to make them this week to go in lunchboxes for the last week of term ๐Ÿ™‚ Thanks so much for linking up with #recipeoftheweek. I’ve Pinned and Tweeted this post and there’s a fresh linky live now. Hope you join in ๐Ÿ˜€ x

  2. I made these last night for my flapjack loving boyfriend. Was feeling super festive so added brandy and nutmeg (my secret to making bought mince taste homemade). Delicious!

  3. Made these Xmas Flapjacks and they are lovely!! Hubby suggested a bit extra cinnamon, good suggestion. Son took some for his post kickboxing snack! And…if I have any gluten free patients, could make it for them! ๐Ÿ™‚ Thanks Priya ๐Ÿ™‚

Made these this morning, they are really good. Ideal for children to make, as no heating of syrup etc required, put the ingredients in the bowl and mix.
My batch have half gone already.

  5. Can’t wait to buy some mincemeat to try these out! I love mince pies but at over ยฃ2 for a box of 4 gluten free ones I am always looking for another way to get my hit.
