Sweet Paprika Chilli of Glory.

This is one glorious meal. Its one of those meals that I look forward to all day, and just knowing I have this yummy goodness to eat later on gives me a zing in my step. Thankfully it’s a superhealthy meal too 🙂

Ingredients
  1. 2 medium sweet potatoes
  2. 2 large carrots
  3. 1 tsp paprika
  4. 1 tsp cinnamon
  5. rapeseed oil
  6. 2 onions
  7. 2 peppers
  8. 2 cloves garlic
  9. 1 tsp coriander seeds
  10. 1 tsp chilli powder
  11. 2 x 400g tins kidney beans
  12. 2 x 400g tins chopped tomatoes
Instructions
  1. Peel and chop the sweet potatoes and carrots into chunks, sprinkle over the cinnamon and paprika, stir to coat the chunks and drizzle over a little oil.
  2. Roast in an oven at Gas Mark 6 for 40 minutes.
  3. Peel and chop the other veg into chunks.
  4. Heat up a dash of oil in a large pan, now sweat the onions for 2 minutes, add the peppers and crushed garlic, chilli powder and coriander seeds. Cook for 10 minutes. Add a splash of water if needed.
  5. Drain the beans and rinse them. Add these and the chopped tomatoes to the pan and simmer for 30 minutes.
  6. Add the roasted sweet potato and carrot and season to taste.
